Double Chocolate Protein Breakfast Muffins

As a busy mom and a working woman I love to have a grab n go breakfast option on hand and these are just that- perfection in to-go form!



Ingredients

3 ripe bananas*, mashed

1/3 cup maple syrup

1 egg

1/4 cup melted coconut oil

1/2 cup milk

1 teaspoons vanilla

1 cup whole wheat flour

1/2 cup cocoa

1 t baking soda

1 t baking powder

1/2 t salt

1/2 cup chocolate chips (plus more for topping)

1/4 cup collagen peptides

3 Tbs chia seeds


Instructions

1. Mix wet ingredients in a large bowl then add dry ingredients in the order above

2. Spoon batter in to prepared muffin tins (I used silicone liners)

3. Top with a few chocolate chips

4. Bake 350 for approx 20 mins


*if bananas aren’t your thing, you can use cooked and mashed sweet potato as well!
